As tomatoes and peppers are beginning to ripen in area gardens, organizers of the Columbus Junction Farmers’ Market are searching for the area’s best salsa. Market director Mallory Smith says this year’s competition includes four categories: canned or cooked mild and medium, canned or cooked fiery hot, recipes using tomatillo or fruit, and pico de gallo style made with raw ingredients.
Smith says participants can deliver their entries to the market this Friday by 5:15, and judging begins at 5:30. This is the seventh year for the event, and it’s organized by the Columbus Junction Community Development Center.
Smith says it is also part of an ongoing effort to recognize residents preparing foods made from Iowa crops and produce.
