As pumpking develop a uniform, deep orange color and the rind is hard they can be picked, according to Iowa State Universty Extension and Outreach. They can also be left until the vines are killed by a light frost. To prevent rot, it is recommended to leave several inches of a stem attached to each pumpkin.
