Iowa State University Extension and Outreach nutrition specialist Sarah Francis said kale is a “nutritional powerhouse” and high on the list of nutrition trends for the new year. The one cup of kale, a dark leafy green vegetable, provides 684% of the daily value of vitamin K, 206% of vitamin A and 134% of vitamin C. She adds that it is known for its role in blood clotting, bone health and antioxidants.

Look for kale with firm, deeply colord leaves and it is available throughout the year, with its peak time from the middle of winter through the beginning of spring.
