A guest chef will be featured at Cafe Dodici Saturday evening. Craig Canfield, of the Quad Cities, shares he has worked with Lorraine Williams, owner of the restaurant, to set the menu and pair wines. Saturday’s dinner features a roasted beet salad with walnuts and goat cheese, an entree choice of a wild mushroom lasagna or a bison tenderloin with a parsnip sauce, and dessert is a chocolate terrine with custard sauce and pistachios.

He studied bread baking at Le Cordon Bleu in Paris, France. Canfield adds he and his wife often travel off the beaten path to learn about other cultures and try different foods, which influences his cooking.
