As we near Thanksgiving and start thinking about all the food to eat, one traditional food that may be surprisingly healthy is pumpkin. According to Hy-Vee Dietitian Melissa Boncher, in addition to being versatile and delicious, pumpkins are very healthy. Pumpkins are full of antioxidants, as well as vitamin A which can help people’s vision. They are also a good source of fiber, vitamin C, and potassium. While it isn’t typically considered a healthy dish, Boncher says it’s easy to make a healthy pumpkin pie. She says there are recipes that skip the crust, which is usually the least healthy part of the pie, as well as some that call for a reduced amount of sugar. She would also argue that using fresh pumpkin to make the pie from scratch is a healthier option than canned pumpkin. Boncher adds, there’s always a way to make any recipe healthier, and with a little work even a full Thanksgiving meal won’t break your diet.
